INGREDIENTS:
- 2 ½ cups granulated sugar
- 1/3 cup orange juice
- 1 2/3 cup water
- 1 stick of cinnamon
- 4-6 pears
INSTRUCTIONS:
Peel the pears, leaving the stems intact. Give it a good rinse and set aside.
Place sugar in the centre of a saucepan (make sure it is the right size for the pears to be able to almost completely submerge in the poaching liquid and fit quite snuggly).
Heat gently until sugar has dissolved, gently stirring with a wooden spoon.
Once the mixture starts to caramelize remove the spoon and don’t stir again. Watch for sugar crystals on the side of the pan and if you see some gently wash them down with a wet pastry brush.
Once the caramel is a rich amber colour add the water, orange juice and the stick of cinnamon.
** Be very careful and keep a safe distance from the stove because the caramel will spatter.
Simmer for 10 minutes.
Add in the pears. Cover and simmer for 15-20 minutes until pears become tender.
Remove and continue to simmer without the lid until the caramel has reduced down by about a third.
Let the pears cool in the poaching liquid.
Serve with cream, vanilla ice cream or chocolate sauce.
