INGREDIENTS:
- 1 (11-ounce) bag butterscotch chips - 4 cups cornflakes
INSTRUCTIONS:
Line two baking sheets with parchment paper (or just roll out parchment paper and set it on an empty counter or flat surface).
Microwave the butterscotch chips in a large microwave-safe bowl for 30 seconds on HIGH. Then remove from the microwave and stir. Repeat, microwaving for 30 seconds and stirring, until the butterscotch is smooth and creamy (mine takes 2 minutes, or four intervals of heating). Carefully stir in the cornflakes until they are coated with butterscotch. Using a tablespoon-size cookie scoop or spoon, scoop a tablespoonful of the mixture onto the prepared parchment paper. Repeat until all the clusters have been formed. You don’t need to leave a lot of space between them because you’re not baking them; you just don’t want them to touch. Allow the clusters to cool for about an hour (or until they have set), and transfer to a tin or serving plate and enjoy.
