INGREDIENTS: - 800g cleaned calamari hoods - 3 lemons - 1 tablespoon olive oil - 1 garlic clove, finely chopped - 1/2 teaspoon chilli flakes - 3/4 cup coriander leaves Wash calamari hoods. Dry well with paper towel. Place hoods on a board. Using a sharp knife, slice hoods crossways into thin rings. Juice 1 lemon. Cut remaining lemons into wedges. Heat oil in a non-stick frying pan over medium-high heat. Add garlic, chilli and 1/2 cup coriander. Cook for 1 minute or until garlic is soft. Add calamari and cook for 1 to 2 minutes or until tender.Add 2 tablespoons lemon juice and toss to combine. Remove from heat. Place calamari in bowls. Top with remaining coriander. Serve with lemon wedges.
