COCONUT BANANA PIKELETS

INGREDIENTS: - 1 cup self-raising flour - 2 tablespoons caster suagr - 3/4 cup coconut- flavoured evaported milk (see note) - 1 egg - olive oil cooking spray - 1 large banana, cut into 12 slices - low-fat vanilla ice-cream, to serve INSTRUCTIONS: Sift flour and sugar into a large bowl. Make a well in the centre. Whisk the milk and egg in a jug. Pour the milk mixture into the flour mixture. Whisk until smooth. Spray a large, non stick frying pan with oil. Heat over medium heat. Drop 4 heaped tablespoons of batter into the pan. Top each with 1 slice of banana. Cook for 1 minute or until golden and cooked through. Transfer to a plate. Cover with foil to keep warm. Repeat with the remaining batter and banana to make 12 pikelets. Place pikelets, banana-side up, on plates. Serve with ice-cream. (Source: Australia's Super Food Ideas March 2008)
