INGREDIENTS:
- ½ lb. bacon slices
- 2 Tbsp. butter
- 2 Tbsp. olive oil
- 4 scallions
- 1 pound package shelf-stable potato gnocchi
- ½ cup freshly grated Parm, plus more for serving
- ¼ cup pine nuts, toasted for 2 minutes in a non-stick skillet
- ⅓ cup snipped fresh Italian parsley (optional)
INSTRUCTIONS:
Place bacon on a rack and set in a jelly pan then place in the oven set to 400 degrees.Bake until browned and crisp, about 25 minutes, flipping once.Remove and drain on a paper towel lined plate.Once cool, cut into 1 inch strips.In a non-stick skillet over medium heat, melt butter and olive oil.Add scallions and cook until just soft, about 2 minutes.Meanwhile, cook gnocchi according to package directions; drain.Add gnocchi with ½ cup Parm and bacon to scallions.Toss well to coat.Transfer gnocchi mixture to large serving dish.
Top with toasted pine nuts, more Parmigiano and chopped parsley.
