INGREDIENTS:
- olive oil cooking spray
- 2 medium zucchini, thinly sliced, lengthways
- 75g soft goats cheese
- 1 tablespoon finely chopped fresh mint leaves
- 3 teaspoons milk
Spray a chargrill pan with oil. Heat over medium-high heat. Cook zucchini, in batches, for 1 to 2 minutes until lightly charred and tender. Transfer to a plate. Set aside to cool. Combine cheese, mint and milk in a small bowl. Season with salt and pepper. Spread 1 side of each slice of zucchini with cheese mixture. Roll up tightly. Secure with a mixture. Roll up tightly.
