LYCHEE WITH CINNAMON AND STAR ANISE SYRUP

INGREDIENTS: - 1/2 cup caster sugar - 1 cinnamon stick - 2 star anise - 4 cloves - 20 lychees (see note) peeled, deseeded - vanilla ice-cream, to serve INSTRUCTIONS: Combine 1/2 cup cold water, sugar, cinnamon, star anise and cloves in a saucepan over low heat. Cook, stirring occasionally, for 3 to 4 minutes or until sugar is dissolved. Increase heat to medium. Bring to the boil. Add lychees. Simmer for 5 minutes or until syrup thickens slightly. Set lychee mixture aside for 5 minutes to cool. Remove spices. Spoon lychees and syrup into bowls. Serve with ice cream. (Source: Australia's Super Food Ideas December 2006 / January 2007)
