PORK POT ROAST WITH PEARS



INGREDIENTS:


- 3 Tbsp. olive oil

- 3 lbs. boneless pork roast

- 1 tsp. kosher salt

- 1 tsp. freshly ground black pepper

- ⅓ cup chopped shallots

- 4 large pears, cored and sliced

- 2 bay leaves

- ¾ cup apple cider

- ½ cup red apple balsamic vinegar

- 4 Tbsp. maple syrup


INSTRUCTIONS:


Preheat oven to 400 degrees.Using the dutch oven heat the oil.Salt and pepper the pork and brown all sides in the dutch oven.Add shallots and cook for 3 minutes.Add pears, bay leaves, cider, red apple balsamic and maple syrup to the pot.Roast for about one hour. (Internal temp. should be 145 F.)Remove from oven.Let rest for 5 - 10 minutes.Remove bay leaves. Salt and pepper to taste.
