INGREDIENTS:
- 2 (300g each) pork fillets, trimmed - 1/3 cup wholegrain mustard - 1 tablespoon white wine vinegar - 2 tablespoons honey - 1 tablespoon sage leaves, finely chopped - 1 tablespoon olive oil - 3 small granny smith or golden delicious apples, sliced into rounds - 200g steamed green beans, to serve INSTRUCTIONS: Place pork on a large ceramic plate. Combine mustard, vinegar, honey, sage and oil in a bowl. Season with salt and pepper. Spoon three-quarters of the mustard mixture over pork fillets. Turn to coat. Cover and refrigerate for 3 hours or overnight, if time permits. Reserve remaining marinade. Preheat oven to 220'c. Place pork in a lightly-greased roasting pan. Spoon over marinade from plate. Roast for 15 minutes. Brush reserved marinade over apple slices. Reduce oven to 200'c. Place apple slices around pork. Roast both for a further 15 minutes, turning apples over after 10 minutes. Remove from oven. cover loosely with foil and stand for 10 minutes. Cut pork fillets in half. Serve with roasted apple slices and steamed green beans. (Source: Australia's Super Food Ideas June 2007)
