STEAK DIANE WITH GARLIC PEA MASH

INGREDIENTS: - 4 medium desiree potatoes, peeled, cut into 2cm pieces - 1 cup frozen peas - 2 tablespoons skim milk - 2 garlic cloves, crushed - olive oil cooking spray - 4 (100g each) beef minute steaks - 1 cup beef stock - 1/2 cup tomato sauce - 2 tablespoons worchestershire sauce - optional salad to serve INSTRUCTIONS: Place potatoes in a large saucepan. Cover with cold water. Bring to the boil over medium-high heat. Boil, uncovered, for 15 minutes or until tender. Add peas. Boil for 2 minutes. Drain. Return to pan. Mash. Add milk and half the garlic. Season with salt and pepper.


Meanwhile, heat a large frying pan over medium-high heat. Spray steaks with oil. Season with salt and pepper. Add to pan. Cook for 1 minute each side for medium or until cooked to your liking. Transfer to a plate. Cover with foil to keep warm.


Reduce heat to medium. Add stock, tomato sauce, worchestershire sauce and remaining garlic to pan. Season with pepper. Cook for 4 - 5 minutes, stirring, or until sauce thickens slightly. Divide mash between plates. Top with steak and sauce. Serve with salad if you wish. (Source: Australia's Super Food Ideas March 2008)
