VEAL WITH FRESH HERBS & LEMON


INGREDIENTS:


- 4 Tbsp. olive oil

- 3 plump cloves garlic, thinly sliced

- 1 - 2 Tbsp. fresh basil, finely chopped

- 1 - 2 Tbsp. flat leaf parsley, finely chopped

- 1 - 2 Tbsp. finely chopped fresh thyme

- 1 - 2 Tbsp. finely chopped fresh rosemary

- 2 fresh chili peppers, thinly sliced

- 1.5 lbs. veal scallopini

- Salt and freshly ground black pepper, to taste

- Juice of 1 lemon


INSTRUCTIONS:


In a large skillet, over medium heat, heat the olive oil.Add the garlic, herbs and peppers.Cook for 2 - 3 minutes, until garlic begins to soften.Turn up the heat to medium high, add veal to the pan and sprinkle with salt and pepper.Cook on each side for 2 - 3 minutes.When the veal is cooked, remove from the pan and squeeze lemon over top.

Serve warm.
