INGREDIENTS:
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/8 tsp baking soda
- 1/4 tsp salt
- 1 cup brown sugar
- 1/3 cup unsalted butter melted in a saucepan until browned slightly
- 1 tsp vanilla extract
- 2 eggs
- 1 cup white chocolate chips
- 1/4 powdered icing sugar to serve
INSTRUCTIONS:
Preheat oven to 170°C.
Line an 9-inch square baking pan with parchment paper, (Tip: leave an overhang on the sides so that it is easy to lift the Blondies out afterwards)
In a large bowl, mix together the dry ingredients: flour, baking powder, baking soda, and salt. Then set aside.
In a separate bowl, blend the melted browned butter, brown sugar, and vanilla together until combined. Add the eggs and mix in well.
Slowly add in the dry ingredients and stir together. Fold in the white chocolate chips. The batter will be super thick. Spread evenly into prepared baking pan using a rubber spatula dipped in water.
Bake for 20 minutes or until lightly browned on top. Remove from the oven and let sit in the pan for ten minutes. Using the paper, lift the square of blondie out onto a wire rack and leave to cool before cutting into 16 squares.
Dust with icing sugar and serve.
